Cauliflower (Brassica oleracea var. Botrytis) – a plant of the cruciferous family, an annual vegetable culture. This culture is rich in vitamin C (60 à 70 mg of vitamin per 100 g of raw product), B vitamins and minerals. 100 g of cauliflower contains only 36 calories, provided that it is grown without artificial fertilizers.
For a long time, this plant was called Syrian cabbage, since it was probably brought out by Syrian farmers from kale, but the Mediterranean is considered to be the birthplace of cauliflower. In the 12th century Arabs brought this vegetable crop to Spain, but only in the 14th century. it spread wider throughout Europe.
